When the weather is cold and damp, homemade ginger tea can really help warm the bones and digestion system. Chop a half pound of ginger and place into 2 quarts of water. Bring to a boil then reduce heat to a simmer. Simmer for 1-2 hours, and keep water level at 1 Qt or greater.
